The Spanish island of Ibiza ( Eivissa in the native Catalan language of the region) is legendary for it’s summer clubbing scene and extravagant nightlife. Home to some of Europe’s most famous nightclubs and bars, the clubs at Ibiza are also credited with originating the “chill out” electronic music genre in the early 1990’s. Taking inspiration from its namesake, EIVISSA is a new bar ( opened in November 2011 by the Cafe Deco Group) in the heart of Hong Kong’s vibrant nightlife district of stretching from Lan Kwai Fong through to SOHO.  Located on the popular Wyndham Street strip of bars and clubs, EIVISSA is a lustrously modern style bar, with a dark, sensuous interior, and targets both an early evening drinks crowd, and late night party goers. The prized location with an open frontage onto Wyndham Street guarantees a steady flow of guests seeking out somewhere new to imbibe some champagne or cocktails.

EIVISSA occupies a compact space with an open facade to the street level pavement. The dark interior glows with the vertical tubes of blue/purple LED light that illuminates from the black walls and around the bar. The stylish room features a long, curving leather banquette along one wall- with the sleek “S” shaped curved bar and service counter at the opposite wall. A series of circular marble topped tables are generously spaced facing the banquette seating- overall the room seats about 30 guests- ensuring a degree of intimacy. A feature of the design are the black chromed ribs that line the walls and curve partially across the ceiling.  A DJ station at the rear of the room is the source of the nightly eclectic mix of tunes played by the resident DJ. Out the front a small outdoor terrace area holds a few high tables and bar stools- always popular for keeping an eye on what’s happening on the street.

As befits the casual sophistication of EIVISSA, the extensive beverage menu features premium wines and champagnes, and a selection of creative cocktails developed exclusively for the bar. The menu is attractively presented in bar mounted and table-top  iPads. Featured  “Evissa Favourites” cocktails include the “Old Cuban”– Ron Zacapa 23 Years,lime, mint, Angostura bitters, champagne and syrup; and “Russian Spring Punch”– Ketel One, lemon, champagne, Creme de Cassis. Additionally, other beverages include flavoured varieties of martinis, shooters, premium and house spirits and beers.

To accompany the beverages, a selection of delectable small bar bites are served from the kitchen. Highlights include Smoked Salmon and Crabmeat with sour cream and capers; Seared Scallops with Chorizo and potato relish; and Beef Cubes with Foie Gras and braised red onions.
