glow, the healthy-eating  restaurant at Metropolitan by COMO, Bangkok, presents the culinary delights of raw food with an exclusive menu during the Thai Vegetarian Festival that will take place across Thailand in October.

The menu has been devised by raw food pioneer Diana Von Cranach, and offers a choice of three or five courses of delicious raw and ‘living’ food. Sample dishes include ‘Thai flower salad with asparagus and green pepper jelly’ and ‘warm mushroom and miso cappuccino with the five tastes of Thailand’. Diana will also share her raw cooking secrets with a cooking Masterclass on 19th and 20th October, which begins with a trip to Pak Klong Talad (better known as the flower market) to show what to look out for in terms of the best raw ingredients.

After being Cordon Bleu trained, Diana von Cranach decided that she had to find her own style of cooking. Later relocating to the Northwest corner of Bali, von Cranach has owned and operated her own boutique resort, Puri Ganesha Villas, since 1996. In 2005, von Cranach began to develop her unique, ‘rawfully good’ interpretation of the ‘living’ food movement that had begun in the USA in the 1990s. Now, von Cranach also owns L’Elephant Vert restaurant in Luang Prabang and works as a guest chef at COMO Shambhala Estate, Bali. Von Cranach is the author of Rawfully Good: Living Flavours of Southeast Asia and is a strong advocate of raw food preparations, with style.

Glow, located adjacent to the acclaimed COMO Shambhala Urban Escape Spa on the 2nd floor of the Metropolitan Bangkok, is a 89-seat casual eatery serving fresh food only, rendered as snacks, light meals and powerfully energising juices, rich in living enzymes, vitamins and minerals. Featuring the COMO Shambhala Cuisine where every dish has been developed to preserve the nutritional integrity of ingredients, while delighting the palate with flavour and texture.

The menu responds to the diversity of fresh ingredients available locally and is inspired by both Thai and international flavour combinations. Most ingredients are organic and locally sourced, and with the Raw dishes  preparation techniques do not exceed 46°C (115 °F). Every dish is rich in living enzymes, essential vitamins and minerals, low in sugar, salt and fat, and at the same time creative, tasty and satisfying.

Glow Menu selections include appetizers, salads, soups, and main courses including dishes comprising fresh seafood, and organic chicken, and wagyu beef. Complimenting the cuisine are delicious juice blends. Each blend is designed for a specific purpose, from boosting immunity to providing a quick burst of energy.

Organic wines are a specialty- with a concise selection of artisan labels sourced from Australia, Italy, France, South Africa, and Chile. A handful of cocktails concocted from organic gin include a Watermelon Martini, and a Pineapple Martini, as well as the classic Dry Gin Martini.

Glow serves breakfast from 6:00 am to 11:00 am, and all-day dining with separate lunch and dinner menus,  through to 9:00 pm.
