Acclaimed as one of Spain’s leading exponents of the revolutionary nouvelle cuisine movement, Michelin two-starred chef Paco Roncero opened his first venture outside Spain in Hong Kong last year- VIEW 62 by Paco Roncero– a collaboration with a local Hong Kong restaurant group. Taking over the entire 62nd level of the iconic Hopewell Centre on Hong Kong Island, VIEW 62 presents diners with panoramic “postcard” views of Hong Kong’s famed harbour, office towers, and the verdant green mountains behind. In addition to its elevated location, the circular floor space of VIEW 62 also slowly rotates, ensuring every table the best possible views. Diners at VIEW 62 can expect an extraordinary culinary experience, as the innovative avant-garde European cuisine of Paco Roncero surprises and delights with its creative combinations of flavors, textures and aromas. Complementing the innovative cuisine, the modern interior design of VIEW 62 exudes a sophisticated elegance, highlighted by bold design elements, to create a fashionable destination for lunches, dinners or evening cocktails.
Although the views from the full height glass wall that wraps around the restaurant are truly spectacular, the designers have also created an intriguing interior that makes its own fashionable statement. The circular space features three sections- the main dining space, private dining, and a bar lounge area. Furnishings are modern but with a classic feel, dining tables covered in crisp white linen. The bar is an impressive structure eight metres long and topped with black marble and fronted with conical shaped bar stools that reference the circular profile of the Hopewell Centre. The most eye catching design feature is the unique ceiling decoration- an installation of over 50,000 suspended wooden sticks of varying lengths, formed into circular patterns to evoke a sense of being “in the clouds”.
The adventurous cuisine created by Paco Roncero for VIEW 62 evolved at his acclaimed (Michelin 2 -star) Madrid restaurant La Terraza del Casino– located within the Casino de Madrid. At the forefront of nouvelle cuisine in Spain- Paco Roncero takes modern, scientific culinary techniques acquired during his three year stint in the kitchen at the legendary el Bulli under maestro Catalan chef Ferran Adria, and overlaid with his inventive approach to gastronomy, creates an exceptional menu of avant-garde cuisine. Diners at VIEW 62 can select from the A La Carte Menu, or alternatively, there is a Set Lunch Menu, and the VIEW 62 Tasting Menu which is probably the best option for sampling the full repertoire of the culinary team. Some of the dishes that exemplify the cuisine include tapas type dishes such as the XXI Century Omelet (see photo below); and the “Gambas al ajillo”– shrimps with garlic and chili pepper. Main courses include Monkfish with “picada” in deconstruction and asparagus; Beef Tenderloin with Ibérico panceta and potato ravioli; and Quail with its sauce, black olive crumble and veggies.
The bar lounge at VIEW 62 is an attraction in itself- and a popular option for evening cocktails, pre-dinner drinks, or late night libations when resident DJs add their tunes to the chill out vibe. A Happy Hour promotion from 5 pm – 8 pm offers attractive deals on cocktails and drinks. The drinks list is focused around classic cocktails such as Martinis (more than 10 varieties including Appletini, Espressotini, French Martini and Lycheetini), Pino Coladas, Manhattan, Moijto, and Sangria. The bar is well stocked with premium spirits, liqueurs, beers and other refreshing beverages. And a broad selection of wines are available to accompany meals- red, white and sparkling- mostly Spanish in origin.

Recently (July 2013) Chef Roncero has launched another revolutionary culinary concept in Hong Kong, “Paco Roncero Catering” at VIEW 62 by Paco Roncero. The goal is to set new benchmarks for creative and culinary excellence at corporate events, product launches, weddings, cocktail parties, team-building, or VIP entertainments, all to be hosted at VIEW 62. Window-front tables offer the panoramic views over the Hong Kong skyline and lush green mountains as the outer floor section slowly revolves- taking about one hour to complete a full revolution.
Close up views of the green mountains directly behind the tower offer a pleasant contrast to the skyscraper landscape of the city.
