Sembilan is the stylish signature restaurant of the upscale Pullman Bali Legian Nirwana– a luxury beachfront resort on Bali’s popular south coast. Adopting a contemporary reinterpretation of traditional Balinese cuisine, Sembilan melds the authentic ingredients and recipes of the indigenous island cooking with modern culinary sensibilities. Attractive presentation and proficient technique delivers exemplary renditions of famous Balinese dishes ensuring a memorable dining experience. Sembilan opened in December 2012 and has proven a popular dining destination with its excellent cuisine and relaxed elegance.
In addition to its first-class culinary credentials, Sembilan also distinguishes with its socially-responsible adaption of the popular farm-to-table food movement. Designated as “Balinese Responsible Dining”– Sembilan have a sourcing policy that requires all fresh produce used in the kitchen to be procured from farms and fisherman located within a 100 mile radius of the restaurant. In addition to supporting the local farming communities, the 100 MILES concept also ensures that all produce is seasonally fresh, and the carbon footprint is also reduced- burnishing the eco-credentials of the restaurant operation.
Sembilan occupies a street level corner space in the expansive hotel grounds- with convenient direct access to the restaurant from its Jalan Melasti frontage. Guests have the option of either an open-air terrace section for relaxed, casual dining, or the contemporary elegance of the main indoor dining room. Sembilan is open daily for dinner only from 6:00 pm. Popular specially themed nights on the outdoor terrace include the charcoal grilled Satay Buffet on Monday nights, and the Babi Guling Street Festival– or traditional roasted suckling pig- on Thursday nights.

Sembilan- authentic Balinese cuisine
Thoughtfully created by Balinese chef Nyoman Budiarta, the Sembilan menu is a compilation of dishes that exemplify the essence of Balinese cuisine. Standout dishes include Senganan Bebek Goreng -crispy duck with long bean in coconut sauce, organic steamed rice, and aromatic spicy sauce; Be Sampi Mebase Bali– Balinese braised beef curry and cocont milk; and Udang Panggang Mebase Tomat– grilled prawn in spicy Balinese tomato sauce.
