Recently opened in Singapore’s chic Bukit Pasoh dining enclave, Humpback introduces a quintessential Pacific Northwest seafood culinary experience to the local dining scene. Inspired by the casual, unpretentious seafood eateries of coastal cities like Seattle and Vancouver, Humpback offers a concise, carefully curated menu that focuses on the world-famous fresh seafood found in the pristine waters of mountain-fed rivers and the Pacific Ocean. Sourced from the region’s abundant small-scale fisheries, seafood highlights at Humpback include selections of shellfish – especially fresh oysters – and fish such as cod and rainbow trout. Complementing the fresh seafood, the bar serves a drink list headlined by white spirit-based cocktails, white wines, champagne and craft beers. Conceived by the team behind popular cocktail bar and eateries Jigger & Pony and Sugarhall, at Humpback guests can expect the same respect for creative cocktails and contemporary culinary sensibilities.

Design  Located in a compact ground level space of a refurbished shophouse, Humpback seats 40 diners at a series of high tables, while table settings on the open-air street front terrace accommodate a further 15 guests. The light-filled space features a simple, casual decor that complements the culinary style – a pared-back palette of nautical blues and natural timbers blends agreeably with the white tiled walls and concrete floor. Meanwhile, at the curved bar, large wire mesh baskets showcase the daily selections of fresh Pacific NW oysters. 

Cuisine  The kitchen team at Humpback take their cooking cues from the celebrated seafood eateries of Seattle – serving a simple ingredient-driven cuisine that fuses traditional techniques with a diversity of contemporary cultural influences. Menu highlights include selections of oysters freshly farmed from the local waterways of the Pacific coastline, and small plates such as Hamachi ceviche, and Cod with leek and chestnut, while non-seafood options include garden produce and several meat dishes.

Drinks   Top-notch cocktails are a hallmark of the sibling Jigger & Pony / Sugarhall bars, and for Humpback the bar team have created a list of signature cocktails designed to complement the flavours of the seafood cuisine. Based on premium quality white spirits only, popular classic cocktails are reinterpreted with flavourful culinary ingredients and modern technique.

Humpback opens Monday to Saturday from 5 pm, with a popular happy hour promotion offering oysters from S$2 each plus special prices on drinks. Menus are regularly updated with seasonal specials – details available on the Humpback Facebook Page.
