Highly rated Singapore cocktail bar impresses with combination of superior bartending & raw seafood bar

With its relaxed vibe, polished bartending and superior cocktails, Gibson is one of Singapore’s top destinations for elevated cocktail experiences and sociable evenings. The six-month-old bar exudes a comfortable, understated sophistication with the retro-inspired venue featuring an intimate bar and lounge space where the multi-awarded bartenders serve up their reinterpretations of classic cocktails, together with an eclectic list of innovative and refreshing signature creations. Elevating the bar snack experience, the raw bar menu offers a wide selection of freshly cured seafood dishes and indulgent seafood platters as the ideal accompaniments to the drinks. Widely recognised for their creative cocktail bar concepts and genuine hospitality, the team behind high-profile local bars Jigger & PonySugarhall, Humpback and Flagship launched Gibson in late 2015 – attracting a similar in-the-know clientele of cocktail aficionados.

 Design  Ascending from the discrete street level entrance of an early 20th Century Chinese clan house building, a dimly lighted internal concrete stairway delivers guests to the compact 2nd-floor bar space. The pared-back interior palette of rendered concrete walls and ceilings, and unpolished timber floors is furnished with a handsome green marble-topped bar counter – matched with vintage green timber bar chairs  – while red leather banquettes and marble-top tables conjure the sophistication of a bygone era. Retro lighting fixtures together with the multicoloured stained-glass panels of the back bar reference the building’s heritage, with vintage glassware and cocktail paraphernalia contributing period authenticity.

Cocktails   Launched this month, the new Gibson cocktail list created by group Bar Programme Director Aki Eguchi features well-informed and imaginative combinations of premium spirits with sometimes complex flavour inflections to create sophisticated yet approachable drinks. Categorised under Elevated Classics; and Inspired by People; Place; and Time, the compact list of 24 cocktails offers guests rewarding drinks experiences – both from the familiarity of classics crafted with traditional bartending technique – and the fascinating signature creations of avant-garde mixology.

Seafood menu   Highlights from the raw seafood bar menu include seasonal fresh oysters, one and two-tier Seafood Towers, sharing plates of Hamachi Ceviche and Tuna Carpaccio, plus several cooked seafood dishes from the kitchen including – Oyster Sliders and Lobster Rolls. Epicurean-quality bar snacks include the Arancini Balls with orzo, octopus and truffle oil, and Sea Urchin served with cauliflower puree.

Gibson opens Monday to Saturday from 5 pm (Sundays closed). The nightly Happy Hour menu offers a selection of attractively priced cocktails, while the Oyster Happy Hour all day on Tuesdays entices with great-value fresh Pacific oysters.
