CAV- prominent purveyor of fine wines, allures with classic café, and fine dining
Since opening in late 2007 in Manila, CAV Wine Shop-Café has earned a high regard among a discerning local clientele that appreciates fine wines and food. Seamlessly combining a retail wine store with both a casual cafe, and an elegant dining room has proven an enticing concept. CAV boasts an impressive wine list of over 500 labels- available for purchase at the retail counter, or to be consumed on-premise- either in the casual front cafe section, or in the more refined elegance of the separate Dining Area. CAV takes its wines seriously, and the wine list features broad selections from all the leading global wine districts, offering a variety of price points ranging from rare vintage premium labels to the more approachable prices of contemporary New World wines. CAV was also the pioneer in Manila with offering selections of wine by the glass from the Enomatic dispensing machines. A series of three of the Enomatic machines are the centrepiece of the main wine display.
The front section of CAV features the all-day Café in a bright, high-ceilinged space. The interior decor features an industrial-chic style with a leisurely atmosphere provided by walls of white-washed exposed brick work, polished concrete screed flooring, and blond timber panelled ceiling beams. Table furnishings are classic cafe-style square timber tables matched with timber chairs, and crisp white linen table clothes.
The other dining option at CAV is in the more refined space at the rear of the building- aptly termed the Dining Area. Here the decor features a minimalist style with a monotone palette of white, beige and blond timbers. Subdued lighting and generously spaced tables provide an atmosphere conducive to the appreciation of fine wines and an accomplished contemporary International cuisine.
A monthly highlight at CAV are the wine dinners, where leading wineries host an evening of imbibing fine wines, matched with a specially created menu of gourmet dishes.
Additionally, a monthly “Wine of the Month” promotion showcases specially selected wines, available at attractive prices.

WINE BY THE GLASS
CAV features Enomatic machines that dispense fresh wine by the glass from a regularly updated selection of 24 bottles
The Enomatic dispensers conveniently allow patrons to select wines by either the glass, half-glass, or tasting portion.
HIGHLIGHTS FROM THE DINING & CAFÉ MENUS
The Cafe Menu offers guests a concise selection of “classic cafe” style dishes for casual, relaxed dining. Starters include dishes such as Pickled Beef Carpaccio with Apple Arugula Salad and Vegetables; and Parmesan Quiche with Organic Greens; with Mains that include Crispy Breaded Lamb Belly with Cilantro Mayonnaise; Whole Chicken Roast “Americane” with Madeira Gravy (2-3 persons); and Smoked Bacon & Parmigiano Mac & Cheese. Selections of Wine Snacks are also served- “tapas” style dishes such as Spanish Chorizo; Gambas al Ajillo; Crabby Patties; and platters of Antipasti, cheese or Jamon Iberico.
In the Dining Area– the menu is presented in a “Prixe Fixe” format with options of 3 or 4 courses selected from the listings on the menu. Menu highlights include starters of Foie Gras Terrine – Onion Marmalade, Toasted Pepper Brioche; and VitelloTonato – Poached Veal, Raw Tuna, Caper Emulsion & Herbal Greens. Second courses include- Red Capsicum Soup – Asparagus & Jamon Grissini; and Crustacean Spaghettini – Lumpfish Caviar & Dill. Main Entrees feature 48-hour Beef Short Ribs – Creamy Coco Beans, Kamote Curls & Burgundy Sauce; Grilled Black Cod – Black Rice, Young Vegetables & Teriyaki Froth; and Angus Rib Eye on Bone – Mushroom Ragu, Spinach Gratin & French Fries. And finally, the Desserts include delicasies such as Chocolate Bomb- Gold Ganache, Pistachio Mousse. & Citrus Carrot Sherbet; Yogurt Panna Cotta- Tropical Fruit Salad, Toasted Granola & Passion Fruit Sherbet; and Artisan Cheese Plate- 3 cheese varieties of choice with condiments.
