Conceived by the team behind popular Layla Eatery & Bar – Summer Experiment opened in Saigon’s District 1 in late 2019. Applying a sensibility of meticulous attention to detail honed at the bar operation of Layla – and tuning into the aspirations and lifestyle of a contemporary (and knowledgeable) Vietnamese clientele looking to experience the latest cocktail trends – Summer Experiment introduced a new level of cocktail discovery to the Saigon bar scene.
Embracing a sustainable model of crafting cocktails, Summer Experiment has created a menu of flavorful cocktails that focuses on both locally sourced seasonal ingredients and on-premises grown botanicals and herbs. Unexpected combinations of local culinary ingredients and regular cocktail ingredients reference familiar local tastes. Additionally, thoughtful recycling of by-products and waste underscores the sustainable approach. Complemented with a strong selection of premium gins, white rums, and vodkas – signature cocktails exemplify the “summer” themed cocktail concept and tropical vibe of the bar.
In addition to the highlighted craft cocktails, the drinks list offers a wide selection of international wines, local and imported beers on tap, and an extensive array of top-notch spirits. Appetites are well-catered for with the kitchen serving up a menu of tasteful “garden eats” sharing plates and comfort foods.
Summer Experiment accommodates guests at the bar with custom-made bar stools, together with high tables for groups – and the outdoor garden terrace for smoking. Bookings are recommended.
