Cajun Cuisine from southeastern America- the “Flavor of Bayou”

The term “Bayou” refers to a creek or a stream, usually located in flat area such as the Mississippi River delta region. It also refers to a region in Southern United States and the area south of New Orleans, Louisiana.

The Cajun culture and cuisine comes from the heritage of the inhabitants of this region, who originally came from the French-born Canadian settlers who were displaced to Louisiana over 200 years ago.

Flavor of The Bayou or in another words, Cajun Cuisine is one of the most celebrated ethnic culinary influences in the United States. Their creative uses of strong spices with seafood and poultry, combined with French cooking techniques have brought the style to the forefront of culinary trends in restaurant across the United States.

This unique promotion is now being served at DEAN & DELUCA MahaNakhon and at DEAN & DELUCA Park Ventures Ecoplex from February – March 2013.

Highlights from the menu

Blackened Cajun Salmon on Baked Rice- blackened Cajun spice rubbed salmon on bell pepper and spicy pork sausage baked rice, served with seafood cream.

Creole Prawn Po’ ‘Boy- pan-seared black tiger prawns with Creole spices in a seasoned lemon and garlic sauce with a southern style coleslaw served in a handmade roll.

Red Snapper en Papillote- Andaman Sea red snapper steamed with baby asparagus, cherry tomato, lemon, Italian parsley in parchment paper.

Tiger Prawn Etouffee- black large tiger prawns stewed in a rich and hot Creole spices with steam jasmine rice

Cajun Chicken Gumbo- a traditional Cajun spiced chicken and spicy pork sausage stew with mixed bell peppers served over steamed jasmine rice.
