Modern Cantonese cuisine by acclaimed Singaporean chef Yong Bing Ngen – within chic New Majestic Hotel

Widely acclaimed for its creative reinterpretation of traditional Cantonese cuisine, Majestic Restaurant has enjoyed sustained popularity since opening in 2006. Located within the heritage-chic New Majestic Hotel – a design-forward property under the umbrella of the locally founded Unlisted Collection group of boutique hotels and restaurants. Headed up by chef-partner Yong Bing Ngen, Majestic Restaurant offers a discerning clientele highly accomplished modern Cantonese cooking, served in a stylish dining space that defies the conventional Chinese restaurant paradigm. Chef Yong’s extensive experience cooking at some of Singapore’s leading Chinese restaurants underscores his imaginative dishes with polished technique. While intriguing combinations of ingredients – some borrowed from other Asian cuisines – epitomize his innovative signature dishes.

Occupying  a glass-fronted space within the lobby of the remodelled early 20th Century hotel, Majestic Restaurant’s contemporary interior melds harmoniously within the hotel’s idiosyncratic combination of  bold modernist decor and heritage shophouse facade. Comfortably seating around 100 guests in the main dining room and adjacent private rooms, the muted tones of the restaurant decor exude an understated stylish elegance, while a series of large portholes set into the ceiling offer glimpses into the hotel swimming pool above.

Cooking in the open kitchen, the culinary team under head chef Yong serve individually plated dishes from a la carte, and both set lunch and set dinner menus. Signature dishes that exemplify Chef Yong’s cuisine include a combination of crispy wasabi prawn, peking duck and pan-seared foie gras; boston lobster with stewed noodles; and crispy durian ice cream. Complementing the modern Cantonese cuisine, a thoughtfully curated wine list of 100 plus labels offers a good variety of styles from leading global wine districts at approachable prices, with several “by the glass” options.

Majestic Restaurant opens from Tuesday to Sunday for lunch & dinner service. A series of four private rooms offer discrete dining for groups of between 8 to 15 guests. Bookings are recommended for both tables in the main dining room, and private rooms.
