New cocktail menu celebrates Singapore’s creative landscape through co-created libations & local collaborators

MO BAR at the Mandarin Oriental Singapore has launched Vol. 7 Modern Localism, The City of Art – a bold new cocktail menu featuring 15 vivid expressions that shine a light on Singapore’s rich creative landscape. Conceived as a notebook in motion and told through the lens of a wandering journalist, the new menu traces the rhythm of the city from morning rituals to late-night revelry, bringing together 11 collaborators spanning perfumery, design, food, music, and industry.
Rituals of Morning, Art and Design
The day opens with Sifr Fizz, an aromatic Highball perfumed with Sifr Aromatic’s essential oil hydrosol, lifted with elderflower and saffron. Forest Fire follows, inspired by Raden Saleh’s Boschbrand, blending Monkey Shoulder Blended Whisky, Los Siete Misterios Mezcal, and a pala and cengkeh amaro into a smoky, expressive serve. The Velour Kiss – crafted with skincare brand La Dermalogique – rounds out the morning, layering gin with chamomile, bee pollen, and extra virgin olive oil.

Afternoon Tea & Creative Pauses
Afternoon brings café stops and creative studio detours. Bukit Kemas, in collaboration with jewellery brand Forbidden Hill, channels old-world glamour through Ryukyu Baijiu, Lillet Blanc, and roasted corn. Kopi Pumptini – developed with Bettr Barista – reworks the Espresso Martini with Kopi O, roasted barley bourbon, and pumpkin. Rounding out the afternoon, B.T.B (Bean to Bar) with Lemuel Chocolate combines bourbon and cacao nibs kombucha into an earthy, effervescent pour also available non-alcoholic.

After Hours, Together
As night falls, Reclaimed Sling 3.0 – an evolved take on the Singapore Sling using No. 3 Gin – makes its return. Jo-hwa (和諧), developed with modern Korean restaurant ANJU, bridges heritage and modernity with matsutake mushroom-infused gin, fino sherry, and pear. Pine-Dustry closes the night with tequila, white wine reduction, and coconut served alongside a pineapple tart – a fond tribute to Singapore’s bar industry.

Enduring Signatures
Anchoring the menu are house signatures including the Mandarin Martini, made with MO BAR Edition No.1 Gin and mandarin bitters, and the M.O. Whiskey Sour featuring Angel’s Envy Bourbon and the hotel’s signature “Exceptionally Singapore” tea, finished as a soft, foamed sour with floral and citrus notes.
