New restaurant & bar elevates traditional Cantonese cuisine with a contemporary dining experience

Recently opening its doors within the refurbished Asian Civilisations Museum complex, EMPRESS embraces Singapore’s cultural and culinary heritage while enjoying a spectacular riverfront location overlooking the CBD and historic Boat Quay precinct. The inviting frontage to the riverfront promenade attracts guests to either the open-air EMPRESS Bar where refreshing cocktails and bar snacks are featured, or into the main EMPRESS dining room – a stylish modern space that exudes an understated and relaxed sophistication. On the menu, authentic Cantonese dishes are elevated with superior ingredients and contemporary presentation. A creation of the dynamic local F&B team The Privé Group, EMPRESS is also joined at the Asian Civilisations Museum complex by sibling Prive Cafe.

Design  Taking cues from Singapore’s past, the interior space harmoniously combines Chinese references with an elegant contemporary decor. And on the outdoor terrace, the EMPRESS Bar offers high-table settings with a spectacular riverfront outlook, while an adjacent section of outdoor dining tables provides a casual dining option. In the main dining room, comfortably spaced dining tables extend across the high-ceilinged open-plan layout, while a handsome marble bar extends prominently across the back of the room. A discrete private dining space seats up to 14 diners –  partially concealed behind traditional Chinese screens.

Drinks  Polished mixology and traditional Chinese ingredients combine to create an inviting bar menu of signature and classic cocktails. Signature cocktails are influenced by Chinese flavours to create well-balanced, exotic drinks  –  including the Shandong Mary – a twist on the Bloody Mary; Lotus Blossom; and the Mango Spice Cocktail. An appetising bar snack menu complements a concise selection of wines, beer, champagne and premium spirits, while cigar fans are well catered for with a tight list of premium brands.

Cuisine   Familiar Cantonese dishes, prepared by an accomplished team of experienced Cantonese chefs, are elevated with modern interpretations and presentation. Standouts among the artfully-plated chef’s specialty dishes are EMPRESS Signature Triple Roast Platter; Wild-Caught Lobster E-Fu Noodles; and Traditional Claypot Rice. Other options on the a la carte menu includes selections of soups; dim sum; appetisers; signature roasts; live catch of the day seafood; fish; and rice and noodle dishes. An excellent value Express Set Lunch menu offers 3 courses for S$18++, with optional wine by the glass.
