Progressive sake parlour within Capella Hanoi’s premium Japanese restaurant KOKI

Since its 2022 opening luxury boutique hotel Capella Hanoi has established new benchmarks for hospitality in the city – with its meticulously executed interior design by renowned architect Bill Bensley complemented by an assemblage of venues offering extraordinary dining and bar experiences. At the forefront of the culinary concepts is The House of Senses – a haven of Japanese design and cuisine sensibilities showcasing the finest Japanese dining under the guidance of head chef Yoshida Junichi – the founder of Japan’s first Michelin-starred teppanyaki restaurant. A series of intimate spaces within restaurant KOKI include private teppanyaki and robatayaki rooms; an izakaya dining room; and the AKIO sake bar and lounge.
At Akio – bar manager/curator Sean Halse has put together an impressive sake library of premium labels from leading Japanese breweries representing a diversity of styles and flavor profiles – highlighted by the specially brewed Akio signature sake, Izumi by Koi. Additionally, the well-crafted cocktail menu features a selection of progressive ingredient-driven sake cocktails that exemplify an expression of the heritage of Japan’s rice-based culture in both cuisine and beverages. Standout cocktails created at Akio include Yamagata – a combination of Roku Gin, Tatenokawa Junmai Daiginjo, wasabi, yuzu, sparkling water, and Sakura; and Niigata – crafted with Hakuto Gin, Hakurkusei Junmai Ginjo, Nakata Kokuto Umeshu, Pomelo soda, and Persimmon cordial.
Guests at the Akio Lounge can order from a bar snack menu of cuisine cooked by the Koki culinary team to accompany their cocktails and sake. Elevated bar bites include Spicy Edamame; Japanese Tuna Tartare; Red Snapper Marinated with Sesame Sauce; and Assorted Sashimi.
Akio Lounge opens daily for lunch & dinner between 11:30- 13:30 and 18:00- 23:00.
