New cocktail menu “Daughters of ATLAS” shaped by myth and celestial constellations

Inspired by the seven daughters of the Titan, ATLAS, the 16-cocktail menu translates Greek mythology into distinct cocktail expressions. Created by Head Bartender Esmeralda Castrogiovanni with the ATLAS team, the menu reflects her personal journey, guiding guests through an intentional drinking experience from lighter, non-alcoholic serves to more spirited creations.
The recently launched new menu unfolds across seven distinct chapters, guided by the stories and personalities of each Daughter, expressed through character, flavour, strength and texture. The menu marks the next evolution of ATLAS’s philosophy of intentional drinking, and the inaugural menu created by Head Bartender Esmeralda Castrogiovanni. An award-winning addition to the team, Esmeralda worked closely with the team to shape Daughters of ATLAS into something that reflects both her own journey and the collective craft of the bar, where each moment is considered and defined by a sense of occasion that carries through from day to dusk.
Designed to be experienced over the course of the day into the evening, the menu’s 16 cocktails follow a progression from non-alcoholic to more spirited expressions, reflecting the natural rhythm of time at ATLAS; from the first drink of the day to the final pour of the night. Each cocktail is presented with its ABV and descriptions of the drink flavour profiles, offering guests a clear way to navigate the menu.

Alcyone opens the journey with four non-alcoholic cocktails, shaped by her affinity for clarity and calm. Among them, Cartographer mirrors with a silky, banana-led beverage, accompanied by a caramel cookie and chocolate button garnish that is designed to be enjoyed first.
As the only Daughter of ATLAS known for her romantic heart, Merope’s story is shaped by her falling in love with a mortal, and revealed in Golden Hour, decadent and velvety, mirroring the constellation’s soft fading light. Crafted with warmth in mind, the cocktail is sherry-forward, bringing together oloroso and Pedro Ximénez with caramelised roasted butternut squash, and finished with a fried sage garnish.
Maia, the eldest of the seven sisters, embodies a sense of grounding and understated strength, reflected in Wingbeat. Rooted in a more herbaceous profile, the cocktail draws inspiration from the popular Greek dish, Tzatziki. Gin is infused with dill, and shaken with a house made Tzatziki cordial, delivering a clean yet gently creamy profile.
Taygete’s chapter is defined by a sense of freedom and the instinct to remain untamed. Pursued by Zeus, her myth tells of her transformation into a doe with the help of Goddess Artemis, allowing her to remain beyond reach. This is mirrored in The Doe, a light and floral cocktail where vodka is combined with peach, and jasmine. Drawing from Esmeralda’s Southern Italian roots, the cocktail rounds out with Passito, a sun-dried dessert wine, which lends a gentle, refined sweetness.

Meanwhile, Electra channels passion and intensity, while edged with mystery. She inspires Apple Aria, a cocktail that appears clean and minimal, yet carries a medley of character, from the gentle smokiness of mezcal to a light bitterness and the bright crispness of green apple. This is softened by elderflower notes, which add a subtle aromatic lift. With a bright, effervescent profile, the drink is paired with a piece of ginger candy, intended to be enjoyed before sipping to heighten the cocktail’s flavours.
The final chapter, Celaeno, moves into shadow and depth, drawing from her quieter, more enigmatic presence among the sisters. In The Illusionist, this restraint is reflected through an interpretation of a classic French dish, duck à l’orange, where duck fat-washed rye and cognac are balanced with orange gastrique, and finished with champagne, a nod to the bar’s celebrated Champagne offerings.

Alongside Daughters of ATLAS, the menu continues to present a curated collection of 17 ATLAS Signatures, a reflection of the bar’s enduring commitment to honouring timeless cocktails. These include the ATLAS Martini, made with the bar’s own gin, as well as seven variations of the Gin & Tonic. A new addition to the offering is the Negroni Ritual, a considered trio that reinterprets the classic serve through different perspectives. The ATLAS Negroni, a constant from previous menus, now anchors the trio with an addition of frankincense to its flavour profile, a nod to Middle East & Africa spice trade routes. Alongside is By the Ounce, which introduces a warmer, spice-led profile through East Indies, nodding to early Southeast Asian trade routes. Completing the set, New Amsterdam offers a deeper expression shaped by Ford’s Gin and Mancino Kopi, finished with a coffee chocolate garnish, a homage to the merchant spirit in Dutch Europe. Together, the signatures and ritual serve alongside the Daughters of ATLAS chapters, offering guests both a sense of familiarity and new expressions to explore throughout the evening.
