Founded by Phạm Tiến Tiệp — who honed his craft at the Sofitel Legend Metropole before channelling that expertise into something altogether more personal — opened on Tống Duy Tân Street in 2017 and promptly changed the conversation around what Vietnamese cocktails could be. The bar carries the hallmarks of a well-loved neighbourhood institution: a neon sign, a cell-style door, rough-around-the-edges interiors evoking a quasi-European dive bar, and a small stage that welcomes live music on weekend evenings.

The cocktail that launched a thousand imitations is the Phở — a theatrical three-tiered flame pour that sends spice-infused gin on a journey through the scent of Hanoi’s most beloved street food: cinnamon, star anise, cardamom, and fresh coriander arriving in sequence before settling into something genuinely refreshing. The success of that single drink catalysed a generation of Vietnamese bartenders to pursue their own culturally rooted creations. A second, larger venue — Nê Boong-ke on Cửa Đông — now accommodates the overflow, but the original remains essential.

Few bar interiors in Vietnam stop first-time visitors quite so completely in their tracks as The Haflington. Hidden down a narrow corridor off Hàng Mã Street in the Old Quarter — the entrance deliberately understated, a taxidermied peacock positioned at the foot of the stairs — the bar unfolds across two and three floors of a French colonial building in a hymn to the grand natural history museums of Victorian Europe. The whisky programme is the bar’s defining achievement: over 200 varieties, from everyday blends to rare aged single malts, alongside a Connoisseur Club that offers private whisky lockers for those who find a bottle worth returning to. Finding Kumquat Tree requires a degree of advance planning: the entrance, behind an unmarked gate on a leafy Tây Hồ laneway, is accessible only with a nightly passcode shared through the bar’s social media. Inside, the space is warm and intimate, lit in the amber tones of the kumquat fruit itself — salvaged Vietnamese antique furniture, clean modern lines, and an energy that manages to feel simultaneously private and alive. A World’s 50 Best Discovery, Kumquat Tree has re-opened after a pandemic-era pause with deeper ambitions: an intensified focus on seasonal Vietnamese produce, stronger terroir connections, and a cocktail programme built around genuinely original thinking. The signature What The Duck — duck-fat washed scotch, vermouth, and chocolate bitters, paired with duck mousse bánh mì — was among the drinks that first put Vietnam on the global cocktail map. Each section of the menu reflects the character of its destination through regionally inspired ingredients handled with considerable technical sophistication. Workshop14 arrived with some of the finest credentials in the region: six months after opening in the former architectural studio of co-founder Hieu Long — on the grounds of Princess Từ Hoa’s 12th-century royal palace, birthplace of the Nghi Tàm silk-weaving tradition — it claimed the Campari One To Watch Award as part of Asia’s 50 Best Bars 2025. The bar positions itself as the symbolic 14th workshop of the 13 traditional craft villages surrounding West Lake, a concept that is neither gimmick nor decoration but a genuine governing philosophy.

The team behind the drinks is beverage director Richard McDonough — known in the industry as the Mood Therapist — alongside bar manager Linh Winnie, who brings ten years of Australian hospitality precision to the floor. The cocktail menu is modernist and modular: a tight list of seasonal signatures with names that suggest irreverence but conceal serious technique. The ‘Can’t Stand The Heat’ — a spicy strawberry margarita twist — and the pyrolysis-treated Negroni riff ‘Don’t Panic’ have become calling cards. The interior combines traditional kumiki timber joinery with Japanese-Scandi minimalism and with a westerly outlook of West Lake, arriving just after sunset is a popular experience.

The bar is a labour of love — owned and run by the people who built it, and it shows. The cocktail programme is creative without being self-serious, the service attentive without being formal, and the atmosphere consistently relaxed regardless of the time or day of the week. A coffee concept, Cửa Đỏ (Red Door), has recently opened next door, making this address a natural anchor for an afternoon that evolves organically into evening. Nọt Bar

BOLD VIETNAMESE-INGREDIENT COCKTAIL BAR

The name is a deliberate provocation: ‘Ngọt’ means sweet in Vietnamese, and the team dropped the letter ‘g’ to signal that sweetness is precisely what you will not find here. Nọt is a bar for guests who prefer their cocktails dry, complex, and alive with the flavours of Vietnam’s regional larder — mắc khén (a Tây Bắc pepper with citrus and floral notes), fermented jackfruit, galangal, and other ingredients rarely encountered in a cocktail glass anywhere in the world.

The TomYum Penicillin — a reinvention of the classic Penicillin cocktail using galangal in place of ginger — is among the most thoughtful drinks in the city: recognisably connected to its template, but entirely distinct in character. The bar team are deeply knowledgeable and articulate about their sourcing decisions, creating the kind of conversation around the bar counter that turns a single cocktail into a genuine cultural education.
