Restaurant features contemporary social dining with modern Australian cuisine & expertly curated wine list

Launched in August, Freebird introduces to Bangkok casual yet sophisticated dining with a distinctly contemporary Australian flavour. A serendipitous collaboration between a group of Singapore-based hospitality and design professionals sees co-founders Alan Barr (greymatters design studio) and Ben Lee (Sarnies cafes and coffee) joined by Australian executive chef Dallas Cuddy, and general manager – sommelier Marcus Boyle (ex-Tippling Club in Singapore) to create the striking new restaurant in Bangkok’s fashionable Sukhumvit district. Occupying a repurposed residential bungalow, Freebird evokes relaxed dining experiences with its meticulously designed interior dining spaces and outdoor garden setting.

Design   The rustic timber-clad facade of Freebird intertwines naturally with the lush tropical garden setting of the refurbished bungalow, while the meticulously executed interior expresses a polished urbanity. Timber surfaces feature prominently, contrasted with white marble counter tops, tiled flooring, and brickwork. A series of interconnected indoor spaces offer options for communal dining, a chef’s table adjacent to the open kitchen, plush banquette table settings, and private dining in an upstairs library room, while the outdoor garden terrace invites with its laid-back, casual vibe.

Cuisine  Internationally experienced Australian executive chef Dallas has created a compact menu grounded on a modern Australian culinary aesthetic that effortlessly melds European and Asian techniques, fresh local produce and regional taste influences to create enticing ingredient combinations. Among standout dishes that exemplify this approach are the Fresh Ricotta Cavatelli with roasted and raw beetroot, marjoram and whey; and the Slow Roast Lamb Shoulder with white anchovy, rosemary, and sesame salt.  Menus are refreshed monthly, while a tasting menu is also available.

Drinks  Sommelier Marcus Boyle has curated a flavour-categorised wine list of primarily boutique small-producer Australian and international labels, complemented with a concise selection of premium sakes. At the bar, classic cocktails are elevated with locally inspired ingredients. House-roasted Sarnies coffee blends are a specialty – served at the Freebird coffee shop all day from 8am.

 Freebird opens daily from 5:30pm serving drinks and dinner until late. Reservations are recommended.
