Modern Mexican restaurant launches refurbished interior and refreshed new menu

Since its launch in 2014El Mero Mero has garnered enduring popularity among Singaporean diners with its elevated Mexican cuisine and engaging setting within the heritage Chijmes complex. Translated from Mexican slang as the “go-to-guy” or “main man”, El Mero Mero, under the direction of founder Alejandro Blanco has served an elevated Mexican cuisine that is not just about tacos and burritos. After 5 years of operation, the restaurant has undertaken a refresh of both design and menu, with a renewed focus on both its Hispanic culinary and cultural legacies – expressed within a contemporary dining sensibility.

Interiors.  After refurbishment, the interior now features a neutral-toned palette with unfinished timber surfaces, white marble tabletops, and lush Mexican plants and cactus varieties. Well-spaced tables within the spacious interior exude an understated sophistication – while the open kitchen, with counter seating, extends prominently into the main dining room enabling diners to view the techniques of the culinary team as they prepare dishes.

Menu. Showcasing traditional Mexican flavour combinations, the new menu combines examples of contemporary Mexican gastronomy together with classic dishes elevated with modern technique and presentation. Among standout dishes are the Tortilla Soup, a creamy combination of roasted tomatoes, guajillo chili, and charred tortillas; Corn Sampler – organic baby corns roasted over charcoal and served on wooden sticks; and from the El Tacos selection – the Baja Fish features tempura Tooth Fish with Pico de Gallo & pickled shallots, and Chipotle Mayo.

Complementing the cuisine, the El Mero Mero drinks list includes a special selection of mezcal-based cocktails epitomised by the signature El Mero Mero – a refreshing combination of orange-infused mezcal, fresh lime, and agave. Also available are an extensive collection of premium tequilas and mezcals; international wines, and local and imported beers.

El Mero Mero opens daily from 5 pm for dinner and drinks – a daily promotion from 5 pm to 7 pm offers all Signature Cocktails at S$9.90++
