Celebrated cocktail bar at Mandarin Oriental Singapore introduces new bar menu

Last month, MO Bar at Mandarin Oriental Singapore introduced a new edition of the bar menu that accompanied the 2018 launch of the hotel group’s signature bar concept. In the first version of the bar menu, guests were offered cocktails inspired by the past nomadic voyagers in Asia and the culinary ingredients and traditions that they discovered on their travels.

Expanding further on this theme, the new menu draws on a series of collaborations with leading regional bars titled as “Nomadic Foragers”. At each city visited by the MO Bar team, indigenous culinary ingredients, herbs, and spices were sampled – and later incorporated into the new collection of cocktails. The new list of 16 drinks featured in the menu is illustrated on a star map showcasing the collection, with menu information including various qualities such as alcohol content, flavor, and style.

Examples from the new menu include the Old Friend – savory drink inspired by travel to Seoul- comprising a combination of BBQ kimchi, alcohol-free soju (also available with alcohol-based soju), and seaweed. While the T and T cocktail was conceived following a guest shift by Bar Manager Michele Mariotti at specialist agave bar COA in Hong Kong – a refreshing tequila-based drink with lemon verbena and fig sourced from a local farm.

The food menu has also been refreshed with new items such as Jiaozi – Shanghai dumplings with Kurobuta pork and minced prawn; Japanese-inspired Gyu-Katsu Sando made with breaded Wagyu beef and bulldog sauce; and the vegetarian Rice Rolls featuring vegetables wrapped in Vietnamese rice paper with sweet chilli sauce.

MO Bar is located at Level 4 of Mandarin Oriental Singapore – and opens daily from 11 am.
