Opened in July 2015, Equilibrium offers an appealing casual dining experience within the recently launched upscale Capitol Piazza lifestyle complex attached to the restored Capitol Theatre.  Taking inspiration from the bacaro of Venice – casual bars serving cicchetti, antipastos, and other Italian classics in the relaxed social environment of a neighbourhood ristorante. Founded by the team behind the popular Supply & Demand casual Italian restaurants, at Equilibrium they deftly marry traditional rustic Italian cuisine with contemporary dining sensibilities with small sharing plates created from imaginative combinations of seasonal ingredients, while the design blends a modern eclectic decor with references to traditional Italian eateries. Open daily, Equilibrium serves both lunch and dinner, with the front bar serving drinks and creative cocktails all day.

Decor   Standing within the voluminous dining zone at Capitol Piazza, Equilibrium occupies an open-fronted space with the long marble-faced bar counter spanning the front, and the main dining area adjacent. A mezzanine level offers a flexible space with a large communal table and is good for private parties and groups of up to 25 diners. The restaurant interior features a stylish contemporary decor accented with elements of the traditional Italian wine bar aesthetic.
Cocktails  In addition to an extensive wine list, the bar team at Equilibrium offer a creative yet attractively priced cocktail list informed by imaginative ingredient combinations, well-balanced taste profiles and progressive mixology techniques. Among the rewarding cocktails is the Faux Patissier – an indulgent blend of butter shortbread syrup, Tupelo Honey Fig Tea, espresso, Koko Kanu Rum, Patron XO, cinnamon syrup, French cream.
Cuisine  Modern interpretations of Italian cuisine on the engaging menu include small plates serves of classic rustic dishes such as pastas and pizza elevated with gourmet ingredients and contemporary plating. Tempting desserts showcase some playful modern culinary  techniques with the stand out example the Deli Dolce which presents as a charcuterie plate – yet reveals sweet flavours and unexpected textures.

Equilibrium opens daily serving lunch from 11:30 am to 2:30 pm, and dinner from 6:00 pm until 10:30pm, with the bar serving drinks and snacks all day.
