Authentic Italian cuisine complemented with cocktails & wine at breezy riverfront destination

With the 2017 opening of Intercontinental Singapore Roberston Quay dining options at the already popular The Quayside were elevated to a new level of sophistication. Occupying the prime riverfront section of the new hotel, modern Italian eatery Publico Ristorante elegantly combines indoor and outdoor terrace dining with a stylish wine bar to create a vibrant new destination. Styled with a contemporary aesthetic that recognises an Italian heritage with a pair of wood-fired pizza ovens, and decor elements such as granite flooring and intricate masonry at the bar. Additionally, floor-to-ceiling windows open out to provide a seamless connection between indoor dining areas and the al fresco riverfront garden terrace.

Dining. A recently refreshed menu created by Executive Chef Marco Turatti, adds lighter lunch dishes, expanded pizza selections all underscored by interpretation of contemporary Italian flavours. The signature Risotto Milanese combines safron, pecorino cheese and red wine reduction;  while the Black Truffle Taliatelle comes with egg pasta, parmesan, fresh black truffle and truffle salsa. Wood-fired pizzas are a classic favourite, such as the Capricciosa, a filling round of house-made tomato sauce, mozzarella, pork sausage, olives and oregano. Vegetariano comprises braised zucchini, fresh burrata, smoked olives, chorizo, and sun-dried tomatoes. Enjoy the sweet Tiramisu, presented as a potted plant – with layers of espresso-infused sponge fingers; the lemon-dipped Bombolini; or Gelato Trio, with fresh flavours served each day.

Drinks. At night, the bar at Publico transforms into a vibrant destination for social libations, treating the guests with a curated wine list offering classic Italian wines such as crisp white Pinot Grigios and full-bodied Chiantis. House-made Vermouth and quirky cocktails headline the drinks list – try the Sbagliato, Italian for “mistaken,” was one born out of error – legend says a bartender used sparkling wine instead of gin. Sip on the quintessential Italian aperitif – Aperol Spritz, or enjoy signature cocktails, including Publico Sling – a joyful mix of gin, orange liqueur, vermouth and rosemary – or Pink & Tonic – orange aperitif, Americano rosa and grapefruit tonic.

Publico Ristorante is on Level 1, InterContinental Singapore, Robertson Quay – open daily from 6 pm –  and for Weekend Brunch – from midday on Saturdays, and 11 am on Sundays.
