New oyster bar and enhanced seafood selections highlight recent revamp at popular French bistro

Among the original assemblage of “celebrity chef” restaurants that continue to be among the standout attractions at Singapore’s Marina Bay Sands, acclaimed New York-based chef Daniel Boulud’s db Bistro & Oyster Bar (formerly db Bistro Moderne) enjoys considerable popularity among both local Singaporeans and visitors. Offering Boulud’s celebrated reinterpretation of classic French bistro cuisine in the contemporary elegance of a dining room that exudes a vibrant New York aesthetic ensures rewarding dining experiences. A recent remodelling of the central bar space, together with an expanded fresh seafood menu – jointly crafted by Boulud and Executive Chef Jonathan Kinsella – is manifested in the sleek new oyster bar and updated name. Guests can also continue to enjoy the celebrated Boulud signature dishes of the db bistro menu in the unchanged main dining room.

Highlights of the new oyster bar seafood menu include the impressive variety of air-flown fresh seasonal oysters from leading growers across both North Atlantic and Pacific Oceans, Maine Lobsters, and Alaskan king crabs. Guests can order freshly shucked oysters directly from the ice bed display – other top choices include the impressive multi-tiered Seafood Platters; and the New England Lobster Roll. Classic seafood dishes from the kitchen include the Whole Roasted Mediterranean Seabass, and the Boulud signature Oct0pus “A la Plancha”.

Also refreshed, the new cocktail list introduces a special selection of exotic tiki-inspired cocktails, crafted from premium Caribbean rums, and attractively served in ceramic Tiki mugs. Quintessential tiki cocktail the Mai Tai is elevated with premium ingredients, similarly the classic Zombie is crafted from premium Diplomatico and Plantation rums to produce a first-class, yet potent, concoction. The stylish new bar continues to serve polished renditions of classic and avant-garde cocktails, plus barrel-aged spirits, and introducing absinthe served in the classic fountain style.
